Paneer Chilli Recipe

Ingredients:

  • For the batter:

    • 1 cup cornflour (cornstarch)

    • 2 tbsp all-purpose flour (maida)

    • 1 tsp ginger-garlic paste

    • 1/2 tsp black pepper powder

    • 1/2 tsp chili powder (adjust to taste)

    • Salt to taste

    • Water (as needed, for making a thick batter)

  • For the stir-fry:

    • 200-250g paneer (cubed into bite-sized pieces)

    • 2 tbsp oil (for frying)

    • 1 onion (sliced)

    • 1-2 green chilies (slit, optional)

    • 1 bell pepper (sliced)

    • 2-3 tbsp soy sauce

    • 1 tbsp tomato ketchup

    • 1 tsp vinegar (optional)

    • 1/2 tsp sugar

    • 1/2 tsp chili sauce (optional for extra heat)

    • 1 tsp cornflour mixed in 2 tbsp water (for thickening the sauce)

    • Salt to taste

    • Fresh coriander leaves (for garnish)

Instructions:

  1. Make the Batter and Fry the Paneer:

    • In a mixing bowl, combine cornflour, all-purpose flour, ginger-garlic paste, black pepper, chili powder, and salt.

    • Add water gradually to make a smooth, thick batter.

    • Dip the paneer cubes in the batter and coat them well.

    • Heat oil in a pan or wok and shallow fry the coated paneer cubes until they are golden and crispy on all sides. Once done, set them aside on a paper towel to absorb excess oil.

  2. Prepare the Sauce:

    • In the same pan or wok, add a little more oil if needed and heat it over medium heat.

    • Add the sliced onions and sauté until they become soft and slightly golden.

    • Add the green chilies and bell pepper, and sauté for 2-3 minutes. You want them to stay a bit crunchy.

    • Add the soy sauce, tomato ketchup, vinegar, and chili sauce. Stir well to combine.

    • Add the sugar and mix until everything is well-coated.

    • To thicken the sauce, add the cornflour-water mixture and cook until the sauce thickens to your desired consistency. Adjust seasoning if needed (add salt, soy sauce, or sugar).

  3. Combine and Serve:

    • Gently add the fried paneer cubes into the sauce and toss them lightly to coat them evenly.

    • Garnish with fresh coriander leaves.

  4. Serve hot with steamed rice, fried rice, or noodles. Enjoy!

Tips:

  • You can add other vegetables like carrots or mushrooms to the stir-fry for more flavor and crunch.

  • Adjust the heat level by controlling the amount of green chilies or chili sauce.

  • For a healthier version, you can bake or air-fry the battered paneer cubes instead of deep frying.
