1 pack of fideo pasta (or break up thin spaghetti or vermicelli into 1-inch pieces)

2 tbsp vegetable oil

2 medium tomatoes

1 small white onion

2 garlic cloves

4 cups chicken broth (or water + bouillon)

1/2 tsp cumin (optional)

Salt and pepper to taste

Fresh cilantro (optional, for garnish)

1. Make the Tomato Sauce:

Blend together:

2 tomatoes (quartered)

1/2 onion (chopped)

2 garlic cloves

1/2 cup chicken broth (or water)

Blend until smooth and set aside.
2. Toast the Pasta:

In a medium pot, heat 2 tbsp oil over medium heat.

Add the fideo (or broken spaghetti) and fry until golden brown, stirring constantly. Watch closely so it doesn’t burn!
3. Add Tomato Sauce:

Carefully pour the tomato mixture into the pot with the toasted pasta. It’ll sizzle!

Stir and cook for about 2-3 minutes to let the sauce deepen in flavor.
4. Add Broth & Simmer:

Pour in the remaining 3 1/2 cups of chicken broth.

Season with salt, pepper, and cumin (if using).

Bring to a boil, then reduce to low and simmer uncovered for 10-12 minutes, or until the pasta is tender and the liquid is mostly absorbed.
5. Taste and Finish:

Taste and adjust seasoning if needed.

6. Garnish & Serve:

Serve hot with chopped cilantro, a squeeze of lime, or even some crumbled queso fresco or avocado slices on top.
